| This
type of olive takes its
name form the Arauco Valley,
where it has been cultivated
since the 17 th. Century.
It is characterized by its
oval shape, medium size,
and strong flavour as a
consequence of the high
acidity developed during
its fermentation. |

|
| This
olive has the peculiarity
of keeping the characteristics
of its Spanish origin. This
fruit is smaller than the
Arauco Type and is characterized
by being very round and
fleshy. Its flesh is tender,
its pit is small and it
has a typical flavour. |
